Ah is there anything better than the pungent sharp aroma of garlic mixed with the sweet herbaceous smell of basil dancing on the air to entice you to sit down and dive into a colorful and delicious display of goodness? I think not. Not only does it look wonderous but it’s also a very heart and health conscience meal. Let me show you how to make this easy show stopper.
Ingredients
- 4 chicken breasts
- 8 garlic gloves – minced.
- 3 cups of grape tomatoes
- 1/2 cup of fresh basil – chopped.
- 2 -3 tablespoons olive oil
- Salt and pepper to taste
Directions:
Heat half the oil in a skillet over medium to high heat. Meanwhile, season chicken with salt and pepper to taste. Place chicken in the skillet and cook for about 5 minutes per side. Remove from pan and set aside.
Add the remaining oil and minced garlic to the pan. After about 30 seconds, add tomatoes and continue cooking for about 2 – 3 minutes. Turn off the heat and add basil. Return the chicken to the pan and spoon mixture over chicken. Serve over pasta or pair it with lemon-roasted broccoli!
